First, place the flour, baking powder, bicarbonate of soda, and caster sugar into the mixing bowl of your Thermomix. Mix for 5 seconds on speed 5.
Add the eggs, milk, melted butter, and vanilla extract to the bowl. Mix for 10 seconds on speed 5. Scrape down the sides of the bowl and mix for a further 5 seconds on speed 5 until the batter is smooth.
Preheat a non-stick frying pan over medium heat. Using a kitchen paper, lightly grease the pan with some oil or butter. Spoon a small amount of batter onto the pan and cook for 1-2 minutes or until bubbles start to appear on the surface. Flip the pancake over and cook for a further minute or until golden brown.
