Paleo Chicken Adobo
Ingredients:
- 1 1/2 pounds boneless, skinless chicken thighs
- 1/2 cup Apple cider vinegar
- 1/4 cup Coconut aminos
- 4 cloves Garlic, minced
- 1 teaspoon Freshly cracked black pepper
- 1 tablespoon Plus 1 teaspoon honey, divided
- 2 tablespoons Avocado oil
- 1 Large onion, thinly sliced
- 1 teaspoon Sea salt
- 1 teaspoon Freshly grated ginger
- 2 Whole bay leaves
Instructions:
- Season the chicken with black pepper and 1 teaspoon of honey, then set it aside.
- In a bowl, mix the vinegar, coconut aminos, garlic, and the remaining honey.
- Heat the avocado oil in a Dutch oven or a large pot over medium-high heat. Add the onions and cook until soft and translucent, about 5 minutes.
- Add the chicken, salt, ginger, and bay leaves to the pot. Pour the vinegar mixture over the chicken and onions.
- Bring everything to a boil, then reduce the heat to medium and let it simmer for 25-30 minutes. The chicken should be cooked through and tender.
