Today we’re sharing a delicious recipe for Masala Oats, perfect for a healthy vegetarian breakfast. Ingredients:

  • 1 cup rolled oats
  • 1 medium onion, chopped
  • 1 medium tomato, chopped
  • 1 green chili, chopped
  • 1/2 cup mixed vegetables (carrots, green beans, peas)
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon cumin seeds
  • 1/4 teaspoon mustard seeds
  • 1/4 teaspoon red chili powder
  • 1/4 teaspoon garam masala powder
  • Salt to taste

Instructions:

  1. Heat a pan over medium heat and dry roast the rolled oats until they turn golden brown. Remove from heat and keep aside.
  2. In the same pan, heat some oil and add cumin seeds, mustard seeds and chopped onions. Sauté for a minute.
  3. Add chopped tomatoes, green chili and mixed vegetables. Sauté for another few minutes until the vegetables are slightly cooked.
  4. Add turmeric powder, red chili powder, garam masala powder and salt. Mix well.
  5. Add the roasted oats and mix well with the vegetable masala. Add some water and cook for 5-7 minutes on low heat until the oats are well cooked and the masala is well blended.
  6. Serve the Masala Oats hot with a sprinkle of cilantro on top.
