Indian cuisine is gaining widespread popularity across the globe, and for good reason! The fragrant flavours and aromas make for a truly delightful culinary experience, whether you’re trying it for the first time or are a seasoned fan.
Today, we’re excited to share two of our favourite Indian recipes with you – Kerala-style chicken curry and spiced apple pies. They’re easy to prepare and use ingredients that are readily available at your local grocery store, so you can recreate the magic of Indian cuisine right in the comfort of your own home.
For the Kerala-style chicken curry, you’ll need the following ingredients:
– 500g boneless chicken, cut into bite-sized pieces
– 1 cup chopped onions
– 1 tablespoon ginger-garlic paste
– 4-5 green chilies, slit
– 1/2 teaspoon turmeric powder
– 2 teaspoons coriander powder
– 1 teaspoon cumin powder
– 1 teaspoon garam masala powder
– 1 tablespoon tomato paste
– Salt, to taste
– Water, as needed
– Oil, for cooking
To begin, heat a tablespoon of oil in a pan and saute the onions until they turn translucent. Add the ginger-garlic paste and slit green chilies, and saute for a minute before adding the turmeric, coriander, cumin and garam masala powders. Mix everything well and cook for another minute.
Next, add the chicken to the pan and stir well to ensure that the pieces are coated evenly with the spices. Cook for 5-7 minutes, or until the chicken is cooked through.
Add the tomato paste and stir well, followed by salt to taste. Add enough water to achieve the desired consistency, and let the curry simmer on low heat for another 10-15 minutes to allow the flavours to meld together.
Serve the curry hot with rice or roti for a delicious and satisfying meal!
For dessert, we have a delectable spiced apple pie recipe that’s sure to impress. Here’s what you’ll need:
– 3 large apples, peeled, cored and sliced
– 1/4 cup brown sugar
– 1 tablespoon all-purpose flour
– 1/2 teaspoon cinnamon powder
– 1/4 teaspoon ginger powder
– 1/4 teaspoon nutmeg powder
– 1/4 teaspoon salt
– 1 tablespoon lemon juice
– 1 pre-made pie crust
– 1 egg, beaten
Preheat your oven to 375F. In a large bowl, mix together the sliced apples, brown sugar, flour, cinnamon, ginger, nutmeg, salt and lemon juice. Make sure that the apples are coated evenly with the spice mixture.
Place the pie crust in a baking dish and spoon the apple mixture into it. Cover the top of the pie with another pie crust and use a fork to crimp the edges together. Cut a few slits into the top crust to allow steam to escape.
Brush the top of the pie with beaten egg and bake in the preheated oven for 40-45 minutes, or until the crust is golden brown and the apples are tender.
Let the pie cool for a few minutes before slicing and serving. Enjoy it on its own or with a dollop of whipped cream for an extra treat!
