Today, we’re excited to share two of our favourite Indian recipes with you – Kerala-style chicken curry and spiced apple pies. For the Kerala-style chicken curry, you’ll need the following ingredients:
– 500g boneless chicken, cut into bite-sized pieces
– 1 cup chopped onions
– 1 tablespoon ginger-garlic paste
– 4-5 green chilies, slit
– 1/2 teaspoon turmeric powder
– 2 teaspoons coriander powder
– 1 teaspoon cumin powder
– 1 teaspoon garam masala powder
– 1 tablespoon tomato paste
– Salt, to taste
– Water, as needed
– Oil, for cooking

To begin, heat a tablespoon of oil in a pan and saute the onions until they turn translucent. Add the ginger-garlic paste and slit green chilies, and saute for a minute before adding the turmeric, coriander, cumin and garam masala powders. Mix everything well and cook for another minute.

Next, add the chicken to the pan and stir well to ensure that the pieces are coated evenly with the spices. Cook for 5-7 minutes, or until the chicken is cooked through.

Add the tomato paste and stir well, followed by salt to taste. Add enough water to achieve the desired consistency, and let the curry simmer on low heat for another 10-15 minutes to allow the flavours to meld together.

For dessert, we have a delectable spiced apple pie recipe that’s sure to impress. Here’s what you’ll need:
– 3 large apples, peeled, cored and sliced
– 1/4 cup brown sugar
– 1 tablespoon all-purpose flour
– 1/2 teaspoon cinnamon powder
– 1/4 teaspoon ginger powder
– 1/4 teaspoon nutmeg powder
– 1/4 teaspoon salt
– 1 tablespoon lemon juice
– 1 pre-made pie crust
– 1 egg, beaten

Preheat your oven to 375F. In a large bowl, mix together the sliced apples, brown sugar, flour, cinnamon, ginger, nutmeg, salt and lemon juice. Make sure that the apples are coated evenly with the spice mixture.

Place the pie crust in a baking dish and spoon the apple mixture into it. Cover the top of the pie with another pie crust and use a fork to crimp the edges together. Cut a few slits into the top crust to allow steam to escape.

Brush the top of the pie with beaten egg and bake in the preheated oven for 40-45 minutes, or until the crust is golden brown and the apples are tender.
