Zeppole from Scratch

Let’s get down to business. Here’s everything you need to whip up a batch:

Zeppole Donuts

Ingredients:

1 cup water
1 stick of unsalted butter
1 tbsp sugar
1/4 tsp salt
1 1/4 cups all-purpose flour
4 eggs
1 tsp vanilla extract
1/2 cup granulated sugar
1 tsp cinnamon

Instructions:

In a medium saucepan, combine water, butter, sugar, and salt over medium heat until butter is melted and mixture comes to a boil.
Add in flour and stir constantly until the mixture forms a ball.
Remove from heat and let cool for 5 minutes.
Add in eggs, one at a time, stirring well between each addition.
Stir in vanilla extract.
In a separate bowl, combine granulated sugar and cinnamon.
Heat oil to 375°F in a deep pot or fryer.
Using a small cookie scoop, drop dough into hot oil and fry until golden brown, flipping once.
Remove with a slotted spoon and place onto a paper towel-lined plate to drain.
Toss zeppole in cinnamon sugar mixture until coated.
