Ingredients:

  • 50g butter
  • 60g plain flour
  • 2 large eggs
  • 100ml strong coffee
  • 3 egg yolks
  • 70g sugar
  • 30g cornflour
  • 200ml milk

Instructions:

  1. In a pan, bring the coffee to a simmer with the milk.
  2. In a bowl, mix the sugar and egg yolks with a whisk until you get a lighter color. Add the cornflour and whisk again.
  3. With a sieve, pour the coffee milk mix into the egg mix and whisk.
  4. Pour the mix back into the pan and bring to a simmer. Keep on the heat while whisking for 3 minutes.
  5. Place in a bowl and add a couple of ice cubes to cool it down quicker.
  6. In a separate saucepan, melt the butter gently with 100ml of water.
  7. Remove from the heat and mix in the flour.
  8. Once combined, place over medium heat and cook for 1 minute while stirring continuously. Remove from heat and leave to cool for a few minutes.
  9. Add one egg and mix well. Then add the second egg and mix well again.
  10. Pipe onto parchment paper in the shape of a pinky finger.
  11. Bake at 180C fan for 25mins until golden.
  12. Once baked, make a small hole in the pastry and pipe the coffee creme patisserie inside.
