Coffee Renoir

Ingredients:
- 50g butter
- 60g plain flour
- 2 large eggs
- 100ml strong coffee
- 3 egg yolks
- 70g sugar
- 30g cornflour
- 200ml milk
Instructions:
- In a pan, bring the coffee to a simmer with the milk.
- In a bowl, mix the sugar and egg yolks with a whisk until you get a lighter color. Add the cornflour and whisk again.
- With a sieve, pour the coffee milk mix into the egg mix and whisk.
- Pour the mix back into the pan and bring to a simmer. Keep on the heat while whisking for 3 minutes.
- Place in a bowl and add a couple of ice cubes to cool it down quicker.
- In a separate saucepan, melt the butter gently with 100ml of water.
- Remove from the heat and mix in the flour.
- Once combined, place over medium heat and cook for 1 minute while stirring continuously. Remove from heat and leave to cool for a few minutes.
- Add one egg and mix well. Then add the second egg and mix well again.
- Pipe onto parchment paper in the shape of a pinky finger.
- Bake at 180C fan for 25mins until golden.
- Once baked, make a small hole in the pastry and pipe the coffee creme patisserie inside.
