I recently discovered a new favorite recipe that I just had to share with you all. It’s for Chicken Adobo, an authentic Filipino dish that is both savory and flavorful. Check out the delicious images below:

Chicken Adobo Recipe

Ingredients:

  • 1 1/2 pounds chicken thighs or drumsticks
  • 1/2 cup white vinegar
  • 1/2 cup soy sauce
  • 6 cloves garlic, minced
  • 1 teaspoon whole black peppercorns
  • 2 bay leaves
  • 1 tablespoon vegetable oil
  • 1/4 cup water

Instructions:

  1. In a large bowl, combine the chicken, vinegar, soy sauce, garlic, peppercorns, and bay leaves. Cover and marinate in the fridge for at least 30 minutes, or up to 24 hours.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade and reserve the marinade.
  3. Place the chicken in the hot oil and cook until both sides are browned, about 5 minutes per side.
  4. Pour the reserved marinade into the skillet and add the water. Bring to a boil, then reduce heat to low and simmer, covered, for 30-40 minutes or until the chicken is cooked through and tender.
  5. Serve hot and enjoy!

Ingredients:

  • 2 pounds bone-in, skin-on chicken thighs
  • 1/2 cup soy sauce
  • 1/2 cup white vinegar
  • 1/2 cup water
  • 1 tablespoon whole black peppercorns
  • 3 bay leaves
  • 1/4 cup brown sugar
  • 5 garlic cloves, minced
  • 1/4 cup green onions, chopped (optional)

Instructions:

  1. In a large bowl, combine the chicken, soy sauce, vinegar, water, peppercorns, bay leaves, brown sugar, garlic, and green onions. Cover and marinate in the fridge for at least 30 minutes, or up to 24 hours.
  2. Remove the chicken from the marinade and pat dry with paper towels.
  3. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the chicken skin-side down and cook until both sides are browned, about 5 minutes per side.
  4. Reduce the heat to medium-low and pour the marinade over the chicken. Cover and simmer for 30-40 minutes or until the chicken is cooked through and tender.
  5. Remove the cover and increase the heat to medium-high. Cook the chicken for another 5-10 minutes or until the sauce has thickened and coats the chicken.
  6. Serve hot over rice and enjoy!
