Ingredients:

  • 1 1/2 lbs. boneless skinless chicken breasts, cut into 1-inch pieces

  • 1/2 cup honey
  • 1/4 cup sliced green onions
  • 3 garlic cloves, minced
  • 2 tsp. grated fresh ginger
  • 1 bay leaf

Instructions:

  1. In a large skillet, combine the soy sauce, apple cider vinegar, honey, green onions, garlic, ginger, and bay leaf. Cook over medium heat until the mixture comes to a simmer.
  2. Add the chicken to the skillet and stir to coat it in the sauce. Cover and let cook for 10-12 minutes, until the chicken is cooked through.
  3. Remove the chicken from the skillet and set aside. Increase the heat to high and let the sauce cook, uncovered, until it reduces and thickens.
  4. Return the chicken to the skillet and stir to coat it in the thickened sauce. Serve over rice, if desired.
