I woke up this morning craving a hearty breakfast, and my mind wandered to the thought of Swedish pancakes. So, I put on my apron and got to work in the kitchen. After a bit of searching, I found the easiest Swedish Pancake recipe on the web. Trust me, it’s a no-fuss recipe that even a beginner cook like myself can ace.

Swedish Pancake Recipe
Ingredients
- 1 and 1/2 cups of all-purpose flour
- 3 and 1/2 teaspoons of baking powder
- 1/2 teaspoon of salt
- 1 tablespoon of sugar
- 1 and 1/4 cup of milk
- 1 egg
- 3 tablespoons of melted butter (unsalted) or vegetable oil
Instructions
- Mix the dry ingredients (flour, baking powder, salt, and sugar) together in a bowl.
- Mix the wet ingredients (milk, egg, and melted butter) separately in a separate bowl.
- Pour the wet ingredients into the bowl with the dry ingredients, and mix to form a smooth batter.
- Heat a non-stick pan and lightly grease it with some butter or cooking spray. Pour enough batter to fill the pan, and cook until bubbles form on top of the pancake.
- Flip the pancake and cook for an additional minute or two, until the pancake is golden brown.
- Repeat the process for the remaining batter, and serve hot with your favorite toppings.
These Swedish pancakes are light and fluffy, just how I like them. They are perfect when served with a dollop of whipped cream and a drizzle of maple syrup. And the best part is, you don’t even have to leave the house to enjoy them.
