I woke up this morning craving a hearty breakfast, and my mind wandered to the thought of Swedish pancakes. So, I put on my apron and got to work in the kitchen. After a bit of searching, I found the easiest Swedish Pancake recipe on the web. Trust me, it’s a no-fuss recipe that even a beginner cook like myself can ace.

Let’s get started.

Swedish Pancake Recipe

Swedish Pancakes

Ingredients

  • 1 and 1/2 cups of all-purpose flour
  • 3 and 1/2 teaspoons of baking powder
  • 1/2 teaspoon of salt
  • 1 tablespoon of sugar
  • 1 and 1/4 cup of milk
  • 1 egg
  • 3 tablespoons of melted butter (unsalted) or vegetable oil

Swedish Pancakes

Instructions

  1. Mix the dry ingredients (flour, baking powder, salt, and sugar) together in a bowl.
  2. Mix the wet ingredients (milk, egg, and melted butter) separately in a separate bowl.
  3. Pour the wet ingredients into the bowl with the dry ingredients, and mix to form a smooth batter.
  4. Heat a non-stick pan and lightly grease it with some butter or cooking spray. Pour enough batter to fill the pan, and cook until bubbles form on top of the pancake.
  5. Flip the pancake and cook for an additional minute or two, until the pancake is golden brown.
  6. Repeat the process for the remaining batter, and serve hot with your favorite toppings.

These Swedish pancakes are light and fluffy, just how I like them. They are perfect when served with a dollop of whipped cream and a drizzle of maple syrup. And the best part is, you don’t even have to leave the house to enjoy them.
