Hey everyone, as we approach the holy month of Ramadan, I wanted to share some delicious recipes with y’all. One of my favorites is this Okra Tajin with Coriander & Garlic dish. It’s perfect for iftar or any time during the month, really.

Okra Tajin with Coriander & Garlic

Okra Tajin

Ingredients:

  • 1 lb. okra, washed
  • 1/4 c. olive oil
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 2 tbsp. chopped coriander
  • 1 tsp. salt, or more as needed
  • 1/2 tsp. black pepper
  • 1/2 tsp. paprika
  • 1/4 tsp. turmeric
  • 1/4 tsp. cumin
  • 1/4 tsp. cinnamon
  • 1/2 c. water

Instructions:

  1. Preheat oven to 375°F.
  2. In a large skillet, heat the olive oil over medium heat. Add onion and garlic and sauté until onion is translucent.
  3. Once onions are cooked, add the coriander, salt, black pepper, paprika, turmeric, cumin, and cinnamon. Cook for an additional minute.
  4. Add the okra to the skillet and mix together well. Pour in the water and bring to a simmer.
  5. Place the skillet in the preheated oven and bake for 20-25 minutes, or until okra is tender.
  6. Serve hot and enjoy!

Chicken Marbella

Ingredients:

  • 1/2 c. olive oil
  • 1/2 c. red wine vinegar
  • 1 c. pitted prunes
  • 1/2 c. pitted olives
  • 1/2 c. capers, with a bit of juice
  • 6 bay leaves
  • 1 head of garlic, peeled and chopped
  • 4-6 chicken thighs or breasts, with skin, bone-in
  • 1/2 c. brown sugar
  • 1 c. white wine
  • 1 tbsp. dried oregano
  • 1 tbsp. salt
  • 2 tsp. black pepper

Instructions:

  1. In a large bowl, mix together olive oil, red wine vinegar, prunes, olives, capers, bay leaves, and garlic. Add the chicken and toss to coat. Cover and refrigerate overnight.
  2. Preheat oven to 350°F.
  3. Arrange the chicken in a large baking dish and spoon the marinade over it.
  4. Sprinkle the brown sugar over the chicken, then pour the white wine over the entire dish.
  5. Sprinkle with oregano, salt, and black pepper.
  6. Bake for 50 minutes to 1 hour, basting frequently with pan juices, until the chicken is cooked through.
  7. Serve hot and enjoy!
