Hey everyone, as we approach the holy month of Ramadan, I wanted to share some delicious recipes with y’all. One of my favorites is this Okra Tajin with Coriander & Garlic dish. It’s perfect for iftar or any time during the month, really.
Okra Tajin with Coriander & Garlic
Ingredients:
- 1 lb. okra, washed
- 1/4 c. olive oil
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 2 tbsp. chopped coriander
- 1 tsp. salt, or more as needed
- 1/2 tsp. black pepper
- 1/2 tsp. paprika
- 1/4 tsp. turmeric
- 1/4 tsp. cumin
- 1/4 tsp. cinnamon
- 1/2 c. water
Instructions:
- Preheat oven to 375°F.
- In a large skillet, heat the olive oil over medium heat. Add onion and garlic and sauté until onion is translucent.
- Once onions are cooked, add the coriander, salt, black pepper, paprika, turmeric, cumin, and cinnamon. Cook for an additional minute.
- Add the okra to the skillet and mix together well. Pour in the water and bring to a simmer.
- Place the skillet in the preheated oven and bake for 20-25 minutes, or until okra is tender.
- Serve hot and enjoy!

Chicken Marbella
Ingredients:
- 1/2 c. olive oil
- 1/2 c. red wine vinegar
- 1 c. pitted prunes
- 1/2 c. pitted olives
- 1/2 c. capers, with a bit of juice
- 6 bay leaves
- 1 head of garlic, peeled and chopped
- 4-6 chicken thighs or breasts, with skin, bone-in
- 1/2 c. brown sugar
- 1 c. white wine
- 1 tbsp. dried oregano
- 1 tbsp. salt
- 2 tsp. black pepper
Instructions:
- In a large bowl, mix together olive oil, red wine vinegar, prunes, olives, capers, bay leaves, and garlic. Add the chicken and toss to coat. Cover and refrigerate overnight.
- Preheat oven to 350°F.
- Arrange the chicken in a large baking dish and spoon the marinade over it.
- Sprinkle the brown sugar over the chicken, then pour the white wine over the entire dish.
- Sprinkle with oregano, salt, and black pepper.
- Bake for 50 minutes to 1 hour, basting frequently with pan juices, until the chicken is cooked through.
- Serve hot and enjoy!
