To begin with, Berkoukes soup is a traditional Algerian dish made with small pasta called berkoukes, vegetables, and meat. It is a hearty and filling soup, perfect for breaking the fast during Ramadan.
Let’s get started with the recipe –
Algerian Berkoukes Soup
Ingredients:
- 1 lb lamb, cut into small pieces
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 cup chickpeas, boiled
- 1 cup berkoukes pasta
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp turmeric
- salt and pepper to taste
- 6 cups water
- 2 tbsp olive oil
Instructions:
- In a large pot, heat the olive oil over medium-high heat.
- Add the lamb and brown it on all sides.
- Add the onions and garlic, and sauté them until soft.
- Add the carrots and celery, and sauté them until slightly softened.
- Add the chickpeas and all the spices, and stir well.
- Add the water and bring the soup to a boil.
- Reduce the heat and let it simmer for 45 minutes.
- Add the berkoukes pasta and continue cooking for another 10-15 minutes.
- Season with salt and pepper to taste.
- Remove from heat and let it rest for a few minutes before serving.
