Today, I’m excited to share with you a recipe that I grew up with and cherish dearly – Pork & Chicken Adobo! This traditional Filipino dish is a perfect balance of salty, tangy and savory flavors, making it a popular favorite among Asian households.
To start, we’ll need to gather the following ingredients:
– 1 lb. boneless chicken thighs, cut into bite-sized pieces
– 1 lb. pork shoulder, cut into bite-sized pieces
– 1/2 cup soy sauce
– 1/2 cup vinegar
– 1/2 cup water
– 1/4 cup brown sugar
– 6 cloves garlic, minced
– 2 bay leaves
– 1 tsp. black pepper
In a large pot or wok, combine the chicken, pork, soy sauce, vinegar, water, brown sugar, garlic, bay leaves and black pepper. Give it a good stir to ensure everything is well-coated with the marinade. Cover and let it marinate in the refrigerator for at least 30 minutes, or overnight for maximum flavor.
Once you’re ready to cook, bring the pot to a boil over medium-high heat. Then, lower the heat to a simmer and let it cook for 30-40 minutes, stirring occasionally. The sauce will thicken and the meat will become tender and caramelized.
While the adobo is cooking, let’s prepare the garnish. Finely chop some fresh scallions and set them aside for later.
