- 1/2 teaspoon of salt
- 2 cups of buttermilk
- 2 large eggs
- 1/4 cup of melted unsalted butter
Instructions:
- Mix together the flour, sugar, baking powder, baking soda and salt in a large mixing bowl.
- Separate the egg yolks and whites into two different bowls. Whisk together the egg yolks, buttermilk and melted butter in a separate bowl.
- In the bowl with egg whites, beat the whites until they form soft peaks.
- Add the wet ingredients to the dry ones and mix together until well combined.
- Fold in the egg whites into the batter until just combined.
- Heat a non-stick skillet or griddle over medium heat and spoon 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface of the pancake and the edges start to look set, then flip and cook on the other side for another minute until golden brown.
- Repeat until all the batter is used up. Serve with your favourite toppings.
