Aunt Jemima Pancakes Recipe
Ingredients:
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups milk
- 2 large eggs
- 4 tablespoons unsalted butter, melted
Instructions:
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Create a well in the center of the dry ingredients.
- In another mixing bowl, whisk together the milk, eggs, and melted butter.
- Pour the wet ingredients into the well in the center of the dry ingredients and stir until just combined. There may still be some lumps in the batter, and that’s okay. Be careful not to overmix.
- Preheat your griddle or skillet over medium-high heat. If you’re using a nonstick skillet, you won’t need to add any extra fat. If you’re using a griddle or cast iron skillet, you can brush on a little bit of oil if you prefer.
- Once the skillet is hot, ladle about 1/4 cup of batter per pancake.
- Cook for 2-3 minutes, or until the edges of the pancake start to look set and the underside is golden brown.
- Flip the pancake over and cook for another 1-2 minutes, or until the other side is golden brown.
- Repeat the process with the remaining batter, making sure to adjust the heat as needed so that the pancakes cook evenly.
- Stack the pancakes on a plate, drizzle with syrup and enjoy!
