Filipino Chicken Adobo Recipe

Ingredients:

  • 1 ½ lb. chicken thighs
  • 1 ½ lb. pork belly, sliced
  • 1 cup white vinegar
  • 1 cup soy sauce
  • 1 cup water
  • 1 head garlic, minced
  • 1 tsp. peppercorns
  • 3 bay leaves
  • 1 tbsp. sugar

Instructions:

  1. In a large pot, combine the chicken, pork, vinegar, soy sauce, water, garlic, peppercorns, bay leaves and sugar.
  2. Cook over medium heat until boiling, then lower to a simmer and cook for 45 minutes to an hour, or until the chicken and pork are cooked through and tender.
  3. After 45 minutes, take out chicken and pork from the sauce and broil for 10 minutes, each side. This will give it a crispy outer layer.
  4. While you’re broiling the chicken and pork, let the sauce reduce until it becomes thick and oily.
  5. Once the chicken and pork are crispy, put them back to the sauce and mix them well until fully coated.
  6. Simmer for another 10 minutes, then turn off heat and let it sit for 10 minutes before serving with a side of hot steamed rice. Enjoy!

Ingredients:

  • 1 ½ lb. chicken thighs
  • 3 tbsp fish sauce
  • 1 ½ cup white vinegar
  • ¼ cup soy sauce
  • 8 cloves garlic, minced
  • 1 tsp. black peppercorn
  • 2 tsp. paprika
  • 2 tbsp. brown sugar
  • 1-2 pcs Bay Leaves
  • 1/2 tsp. Cayenne Pepper (optional)
  • 2 tbsp. oil
  • 1 cup water

Instructions:

  1. Combine chicken, vinegar, soy sauce, garlic, black peppercorn, paprika, brown sugar, bay leaves, and cayenne pepper (if using) in a pot. Let it marinate for about 30 minutes.
  2. After 30 minutes, add 1 cup of water into the pot and place it on medium heat. Bring to a boil and then turn heat down to low.
  3. Cook for 30 minutes and add 3 tbsp of fish sauce. Continue cooking for another 10 minutes or until the chicken is fully cooked.
  4. Remove the chicken from the pot and place it on a greased baking sheet.
  5. Before broiling, brush the chicken with oil and a sprinkle of paprika. Broil for 4-5 minutes each side or until they become crispy in the outside.
  6. While you’re broiling the chicken, let the sauce reduce and thicken to your desired consistency.
  7. Once the chicken is crispy, add it back to the pot and coat it with the sauce.
  8. Serve hot with a side of steamed rice. Delicious!
