To start, let’s gather up our ingredients:
- 1 1/2 lbs bone-in, skin-on chicken thighs
- 1/2 cup soy sauce
- 1/2 cup white vinegar
- 5 cloves garlic, minced
- 1 tsp black peppercorns

- 1/4 cup brown sugar
- 1/4 cup water
- 2 tbsp vegetable oil
- Salt, to taste
Now, let’s get cooking!
Step 1:
Heat up a large pan over medium-high heat and add vegetable oil.

Sear your chicken until it’s a beautiful golden brown colour. Don’t worry about cooking it all the way through, we’ll finish it off later.
Step 3:
Remove your chicken from the pan and set it aside.

To the same pan, add garlic and black peppercorns. Stir it around until it’s fragrant and then add the soy sauce, vinegar, brown sugar, water, and bay leaves.
Step 5:
Stir everything together and bring it to a boil over high heat.
Step 6:
Now it’s time to add your chicken back into the mix. Lower your heat to a simmer and let everything cook together for about 30 minutes.
Step 7:
Once your chicken is cooked through, transfer it to a serving dish and pour the sauce over it. Serve it with a side of rice and enjoy!

Remove the chicken from the pot and set it aside. Increase the heat and let the sauce reduce until it thickens.
