  • 1 tablespoon olive oil
  • 2 pounds boneless, skinless chicken thighs
  • 1/2 cup soy sauce
  • 1/2 cup apple cider vinegar
  • 1/4 cup packed brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon black peppercorns
  • 1 tablespoon dried oregano
  • 2 bay leaves

Instructions:

  1. Heat oil in a large skillet over medium-high heat.
  2. Season chicken with salt and pepper.
  3. Working in batches, cook chicken until golden brown on both sides, about 2-3 minutes per side.
  4. Transfer chicken to a slow cooker or Instant Pot.
  5. In a mixing bowl, whisk together soy sauce, apple cider vinegar, brown sugar, garlic, black peppercorns, and oregano until well combined.
  6. Pour mixture over chicken in slow cooker or Instant Pot.
  7. Add bay leaves to the pot and stir to combine.
  8. Cover and cook on high for 3-4 hours or on low for 6-8 hours until the chicken is cooked through and tender.
  9. Remove chicken from the pot and transfer to a platter.
  10. Use a slotted spoon to remove bay leaves from the sauce.
  11. Cook sauce over medium-high heat for 10-15 minutes, or until thickened and reduced to about 1/2 cup.
